From Tokyo to Lima, BOYA’s Chef Augusto is Coming to The Oberoi, Mumbai

The Oberoi, Mumbai hosts a three-day pop-up by BOYA’s Chef Augusto Cabrera, celebrating bold Japanese-Peruvian flavours.

Before he became one of the most exciting names in India’s contemporary sushi movement, Chef Augusto Cabrera was just a young chef in the kitchens of The Oberoi, New Delhi, learning the ropes and mastering the precision of Japanese techniques. Years later, with accolades, a loyal following in the capital, and a buzzing restaurant to his name—BOYA, Delhi—he’s circling back to where it all began.

This July, Chef Augusto returns to the Oberoi family, bringing with him a bold, sensorial journey of Nikkei cuisine—where the finesse of Japan meets the fire of Peru. From 17th to 19th July 2025, Fenix at The Oberoi, Mumbai, will play host to this exclusive pop-up, presenting a curated showcase of BOYA’s inventive and flavour-forward dishes.

Known for its elegant, open-plan layout and the warm polish of a global traveller’s living room, Fenix is the perfect canvas for Chef Augusto’s expressive dishes. The BOYA experience is rooted in contrasts—delicate sashimi meets punchy ceviche, silky nigiri sits beside spice-laden pork belly. It’s a cuisine that tells stories of migration, memory, and reinvention.

The pop-up menu reads like a chef’s memoir with Yellowtail Carpaccio Ceviche, Hokkaido Scallops Tiradito in Yuzu Wakame, and the iconic Miso-Marinated Chilean Sea Bass. Don’t miss the signature sushi rolls that made Chef Augusto a sensation—Kokana Rolls, Persea Americana, and the fiery Cabrera Spiced. Appetisers range from rock shrimp tempura in sriracha mayo to the crunch of chicharrón with Worcestershire and Filipino pork belly in cane vinegar. Mains include classics like arroz con chancho and a thoughtful mix of vegetarian and non-vegetarian nigiri and sashimi.

Reflecting on his journey, Chef Augusto says, “I began my career as a sushi chef at Oberoi Hotels & Resorts, so I am humbled and delighted to return for this exclusive event. This menu is a heartfelt tribute to where it all started.”
